Rather than a recipe, this is more of a quick fix – no specialty items here!
Brown some ground beef or shredded chicken – even better – grab a rotisserie and shred it. Toss the meat with 1/2 tsp cumin and some salt. Feel free to toss in some frozen spinach too.
On a sheet pan, spread one layer of tortillas with your favorite red or green enchilada sauce, a scoop of your meat, some shredded cheese and another spoonful of enchilada sauce. Repeat with one more layer.
Put under the broiler in the oven until the cheese is melted and bubbly. Top with shredded lettuce, diced onions and chopped cilantro.
